In summer, the last thing you want to do is spend a lot of time in the kitchen, slaving over a hot stove. Light summer fare, healthy and quick to prepare, is far more appetizing and appealing than heavier foods when the weather is hot. Wraps
Wraps are an easy and healthy alternative to heavy hamburgers, and they don’t entail firing up the grill. Many wraps are made using tortillas, but the tortillas don’t have to be the old flour or corn standbys. Healthier versions are made from whole wheat or are flavored with spinach or sundried tomatoes. Wraps can also be made using large lettuce leaves, which will be an even healthier option. There is no end to the possibilities for what you can put into a wrap sandwich. Layer in some sliced deli meat, or that leftover chicken teriyaki. Add a little cheese, plenty of raw vegetables for crunch, or some light dressing to spice up the flavor. Serve these with a side salad or fresh fruit, and you have a terrific and quick dinner for a hot summer day.

Salad
Salads, of course, can also make a great meal for summer evenings when the thought of being near a hot stove is far from appealing. Don’t just stick to plain old iceberg lettuce, though. Make a trip to your local farmer’s market to pick up the freshest greens and vegetables. Combine those with unexpected extras, like fresh grapes or toasted almonds, or add some diced ham or turkey for a bit of extra protein. For a fun family meal, have everyone choose one or two toppings they would like, and set everything out like a salad bar. There is no limit to the fresh and healthy items you can add to a salad to make it delicious and fun.

Pasta Salad
If it’s not too hot to boil some water, pasta salads make terrific summer meals. Cook up some of your favorite pasta early in the day, and then refrigerate it until dinnertime. Add in some fresh vegetables and a bit of dressing, and you have a light and healthy summer meal that’s sure to please the family.
